Cold Bean Salad, experiment #5
12 oz can of cooked pinto beans, drained & rinsed (recycle the can)
no sweet peas
1/2 cup of frozen corn
6 oz of diced roasted tomatoes, no salt added (half a 12oz can)
9 black pitted olives, cut in half
1 tablespoon of apple cider vinegar
1 tablespoon of pear vinegar
1 tablespoon of capers
1/3 cup crushed walnuts
Total time =< 4 minutes
Results: If experiment #4 was a 3 out of 10, this scored 4 or 5. The walnuts and capers were positive additions. Texture was good.
Next time: I don't need two different vinegars; I'll omit one.
